A flat pouch is a three-side-seal bag: sealed on three edges, no bottom gusset, so it lies flat instead of standing on shelf. That makes it thinner to store and ship, and simpler to fill by hand. Choose a stand-up pouch instead if the bag has to hold itself upright facing a shopper.
